Dara's Pineapple Salsa

Pineapple rings – grill or pan fry until nicely carmelized, cool and cut into tidbits
1 Jalapeno finely diced
1 red onion finely diced
Cilantro chopped
Salt and Pepper
Olive oil (maybe a tablespoon)
Balsamic vinegar (a little more than olive oil)
Mix it all up and enjoy. It’s usually better if you can let it sit for awhile so all of the flavors can mingle.
